The Weekender: Wegmans, Whiskers, & CXWORX

My recent trip to Wegmans, aka the holy grail of grocery stores, was yet another reminder of how empty my foodie life is without it. If I had access to their lush produce section all the time, I’d never want to eat unhealthy! …LOL, yeah I couldn’t even type that with a straight face. But it would be amazing to have access to that whenever I wanted.

In fact, I bought fresh zucchini from Wegmans for the Blush Lasagna with Zucchini I made last week. Do I have zucchini in my local grocery stores? Sure, but this time of year, they’re usually pretty pathetic-looking. Wegmans must import their produce from heaven though because, even in winter, their zucchini was gorgeous and other-worldly.


Wegmans also makes their squashes and other veggies into a variety of made-to-go veggie noodles. I’ve tried them before on previous visits, but this time, they came as a side dish to the Chickenless Parm I bought. Yes, just another reason to love Wegmans: they make CHICKENLESS Parm as a ready-to-cook meal! All you do is pop it in the oven right in the tray you buy it in.

I tried a sample before buying because Wegmans is amazing and frequently has tons of free samples throughout the store. I didn’t need it to know the Chickenless Parm would be amazing, but I did need a little snack to fuel my shopping trip.


Although it was a little pricey, I was thrilled with the Chickenless Parm. I looked forward to coming home and having it for dinner all day. For a vegetarian, this kind of thing is really exciting! And it lived up to my expectations. Wegmans made an excellent breaded “chicken” breast then covered it with a sweet yet zesty marinara and a generous amount of fresh mozzarella. The zoodles (zucchini noodles) made an excellent accompaniment.

The best part is that the whole meal was under 500 calories and had 31g of protein! Man, I wish I lived close enough to buy this stuff all the time.

Of course, living closer would also mean buying adorable cupcakes like this all the time.

Speaking of adorable, I have added on to my Hello Kitty Easter collection with this adorable well-dressed Kitty that Ryan got me! She’s wearing a cute Easter dress and bunny ears and carrying a basket full of flowers.

Now, here’s some real-life cute: a sleeping Mr. Poe! Cats look so sweet and innocent when they slumber…but we know better.

This weekend, I once again stepped out of my comfort zone to attend an advanced training for another one of my group fitness certifications, Les Mills CXWORX. I got my certification last year, but Les Mills offers opportunities to advance your training: AIM 1 and AIM 2. I completed my AIM 1 in BODYSTEP back in November, so it feels amazing to now have accomplished this for both programs. It’s a full day of learning how to enhance your technique and coaching that’s more exhausting on your brain than it is your body. I took away so much to work on and implement in my teaching. Next stop, AIM 2!
