I was a fool to think I could make it through winter without being defeated by a malicious cold or flu. Here I am at the end of March down for the count with a cold. Yep, the germs finally got me, folks. I was so close to the end of winter…so close!

I discovered another comfort food I’m obsessed with recently: eggplant fries. My local pizzeria makes them, and they’re insanely addicting. It’s just fried, melt-in-your-mouth eggplant with a crispy paper-thin batter. I think I love them as much as french fries!
But you unfortunately cannot eat fried eggplant every day without gaining a zillion pounds, so I decided to play with making my own baked version. These crispy buggers will be coming your way soon!
I know most people go darker with their hair at the beginning of winter, but I felt like making the switch just in time for spring. Darker is in my roots, so I traded in my highlights for these chocolaty locks, and I am loving it!
Yeah, I know Mr. Poe is much cuter to look at than I am, so here he is in all his snuggly awesomeness.
